Banana is one of the fruits that I love and I like it in snacks, ice cream, cakes and pancakes. The best type of banana to be used in this recipe is overripe bananas. The one with dots that the flavour is oozing out each time you pass by the kitchen counter. This give the pancakes it unique sweetness and aroma that is irresistible and you won't stop at one when you start eating. Even while frying the pancakes the whole kitchen "goes Bananas" with the sweet flavour combined with the vanilla. It's just so inviting. Nutmeg and cinnamon are a pair that I add to banana cake and banana pancakes as well, but you may ommit if you are not a fan. If you make this recipe quite often then you will decide which spice or flavour to add that suits your taste buds.
Banana pancakes

Ingredients
- 2 large overripe bananas
- 2 large eggs
- 2 1/2 cups flour
- 1 tsp nutmeg
- 1 tsp baking powder
- 1 cup milk
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 1 tablespoon sugar ( optional)
- 1/2 teaspoon vanilla
Directions
1. Mix flour, nutmeg, cinnamon, baking powder, sugar and salt in a medium bowl. Make a well in the centre and set aside.
2. In another bowl mix eggs, vanilla, milk and mashed bananas.
3.Make a well in the center of the flour mixture ,our the egg mixture into the flour mixture and mix. If too thick add 1/4 cup of water and mix.
4. Place a clean non stick frying pan over medium heat and add little oil. Bend the pan to distribute the oil on the surface of the pan.
5. Scoop 4 tablespoons of batter into the center of the hot frying pan and tilt the pan to allow the batter to spread to the entire surface. Allow to cook for about 3 minutes then flip to the other side and fry till golden brown.
6. Remove from pan and place on a plate lined with paper towels. Serve hot with syrup or honey.
