Beans Porridge Recipe

If you are wondering what to make for lunch or dinner then wonder no more because this beans porridge recipe that i am about to share with you is so easy to make and delicious to the taste buds. You can eat it just on it's own or pair it with rice, potatoes, yam, plantains or even pasta. The secret to the softness of this beans recipe is that the beans are soaked for over 6 hours before cooking. The best is even to soak it over night. But do the one that is convenient for you. I also added parsley, celery, ginger and garlic. The taste is so good and the flavour is out of this world.


Beans Porridge Recipe

Ingredients


  • 4 cups of black eyed peas, soaked and boiled till soft.
  • 8 large fresh tomatoes, blended
  • 2 Tablespoons of pepper paste
  • Crayfish to taste
  • I large onion
  • 1 Tablespoon ginger paste
  • 1/2 Tablespoon garlic paste
  • 1 teaspoon curry powder
  • 1 large green bell pepper, diced
  • 1/2 cup of vegetable oil
  • 3 seasoning cubes
  • Salt to taste
  • 1 cup of water 




























Directions

  1. Place a clean pot on the cooker over medium heat and add the oil.
  2. Add the diced onions and cook till soft and transparent.
  3. Add the blended spices ( ginger, garlic, celery and parsley).
  4. Fry for about two minutes then add the tomatoes. Fry for about 10 minutes.
  5. Add the water, crayfish , pepper, seasoning, curry powder.
  6. Cover the pot and allow it to boil for about 10 minutes.
  7. Add the boiled beans and salt to taste.
  8.  Cover the pot and allow it to cook over low heat  for 15 minutes.
  9. Add the diced green pepper and stir till it's incorporated. 
  10. Allow to cook for 2 more minutes before bringing it down.
  11.  Serve hot.
