"Koki" is one of the Cameroonian dishes i loved so much when i was growing up . but this bean pudding is is different from the usual moin moin we know in Nigeria. It is made with palm oil which gives it this unique colour, flavour and taste. I like puddings that are tied with plantain leaves before steaming because the fresh leaves gives the food a very nice aroma. The only thing i do not like is that its quite tasky and has many procedures. You have to really make out time to prepare this dish and i asure you that the time you spend on making it is worth it.
Cameroonian Bean Pudding(koki)
Ingredients
- 35cl of palm oil
- About twelve plantain or moin moin leaves, washed and dried.
- Salt to taste
- 4 seasoning cube
- Pepper to taste
- Boiled ripe or unripe plantains to serve.
- Ropes for tying
- 2 cups of warm water
Method Of Preparation
- 1. Pick the beans, wash and remove skin.
- 2. Soak the washed beans in water for about an hour
- 3. Blend the beans using a blender at home or a commercial grinding machine to a smooth consistency.
- 4. Place a clean dry sauce pan on the cooker and add the palm oil. heat over medium heat for 5 minutes. Allow to cool.
- 5. Add the palm oil and warm water to the bean paste and mix till incorporated.
- 6. Add salt and pepper to taste.
- 7. Take a small bowl, place clean leaves to form a well and spoon the bean paste into the leaves. tie and place in a clean pot lined with cut out a rice bag.
- 8. Repeat the process till all the paste is tied.
- 9. Cover the pot and place on the cooker over medium heat.
- 10. Add boiled water and steam for about an hour, adding the boiled water as it dries up,
11. Serve hot with boiled ripe or unripe plantains, yam and potatoes, Bon Appetit !!
